Tired of Eggs?

This morning we tried something new to replace our usual fare of scrambled eggs for breakfast: Cream of Buckwheat. It is gluten free and actually considered a fruit, so not a grain. It boasts a pretty significant nutritional profile and it was quick and easy to prepare.

From what I have read, the Paleo/Primal consensus on buckwheat is that while it is gluten-free and not a grain, it still should be enjoyed only in moderation (high in carbs) and never replace your vegetables and protein.

Well we indulged in our hot breakfast "cereal" nonetheless and even my picky eater Elliot approved. The kids' serving was topped with grass-fed butter, raw honey, semi-sweet mini chocolate chips, shredded coconut, banana, and a drizzle of raw local honey.
My version consisted of the strawberry rhubarb compote I made the other day along with some slivered almonds.

This breakfast filled our tummies for quite a while and I felt steady energy levels throughout the morning.
